Hot summer days is the perfect time for crisp and fresh salads. This Primal Vinaigrette is the perfect addition to your favorite salad and oh so versatile. Drizzle this creamy, healthy Vinaigrette on top of a simple side salad or tossed it with Cucumbers to make a quick and easy Cucumber Salad. The uses for this Primal Vinaigrette are endless!

It’s All About the Mayo

This Primal Vinaigrette is a riff on the mayonnaise based dressing that my Grandmother made regularly and primarily for her cucumber salad recipe. We have this recipe ready to go for any day of the week and can literally be use with any salad or a dip for your favorite fresh veggies.

Using Primal Kitchen Mayo lifts this creamy vinaigrette to the next level! Primal Kitchen takes pride in their use of healthy avocado oil in place of highly processed vegetable oils. Avocado Oil is a clean and natural fat that adds nutrient density to the mayo that Primal Kitchen makes. This mayo is perfect for anyone who is looking for a Keto/Paleo mayo alternative. We have used Primal Kitchen mayo and their many other products for several years and love the flavor and quality they provide.

Simple Preparation

This Vinaigrette is simple and fast to prepare. The base recipe has three ingredients: Primal Kitchen Mayo, Apple Cider Vinegar and a pinch of salt! Throw these ingredients in a measuring cup and blend together using an immersion (stick) blender or a small food processor. Pour this vinaigrette into a mason jar or other glass air tight container and store in the fridge until ready to use. Shake it well right before using!

Riffs on Vinaigrette

Here is a handful of single-ingredient add-in to take your vinaigrette to the next level!

  • Garlic. A single clove of crushed garlic adds a beautiful punch to this simple vinaigrette. Garlic is usually always thrown in to this recipe! If you would prefer a mellower garlic flavor throw a few cloves on to a small skillet and toast until lightly browned. Remove the peels and blend together with the other ingredients.
  • Fresh herbs! Basil, Dill, Cilantro, Parsley, Green Onion are the herbs we keep regularly and love adding to this vinaigrette. They may be blended with the ingredients or chopped and added in to the base recipe. You do you!
  • Spices and Mustard. Feel free to play around with the flavor profile of the dressing using a variety of spices and even mustard. I am obsessed with cracked black pepper, it adds the perfect hint of spice. A generous pinch of Black pepper is almost always add it in to this dressing. Mustard is another loved ingredient that adds a beautiful tang to this vinaigrette. You can add in about a tablespoon of coarse or smooth mustard, depending on your preference! Have fun!

  • Immersion Blender OR Food Processor
  • Immersion Blender Measuring cup OR 4 cup Pyrex Measuring Cup

Ingredients
  

  • 3/4 cup Primal Kitchen Mayo Primal Kitchen Mayo can be found at just about any HEB or local Grocery Store
  • 1/4 cup Apple Cider Vinegar Vinegar/Other Substitutes: White Wine, Balsamic, Rice, Lime Juice
  • 1 tsp Salt

Instructions
 

  • Combine the Mayo, Vinegar and salt to the measuring cup. Use the immersion blender or food processor to blend until creamy. Taste and season with more salt to your preferred taste.
  • Store in a mason jar or other glass air tight container in the fridge until ready to use! Shake well immediately before use.
